We always use the best quality local, organic, and seasonal ingredients, including high-quality 00 organic flour from Central Milling and our own naturally made and maintained leaven. This leaven, used instead of commercial dry yeast, can take on the living flavor of the environment in each of our restaurants. What else is our secret? Nearly 80% of our menu items are prepared using the imported Italian Valoriani oven, which allows us to create a pizza like no other!
